Steamed cod loin with lemongrass, ginger, chilli and star anise with a spicy rice salad. Honestly one of the most delicious and fresh things I've cooked in a while. Don't feel like a fat cunt after eating it either. I love steamed fish. Salmon, cod, halibut, whatever. Its all awesome. And the health benefits are almost unparalleled. I eat it at least once a week.

I've been trying to eat more fish, I love it and usually eat it at least once a week anyway but trying to up my fish intake to 3 a week.
3 fish meals, 2 chicken, 1 red meat and a veggie dish is my aim for every week.

Nice one. I've reduced red meat to twice a month now. I find myself feeling a lot better ever since. I eat good portions of turkey, chicken and fish so my meat cravings are taken care of. And you're bang on. Seafood and asian flavors are just meant to be.

Think it makes really good meatballs but not even close to a proper beef burger.

I love fish and seafood in general. One of the best meals I ever had was sardines caught and grilled while still on the boat off the Adriatic coast in Italy. I think that was the moment I decided I wanted to be a chef. Grilled fresh sardines is still one of my favourite meals.
I like to use squid with Asian flavours. It's cheap as fuck and tasty. Marinated with with red chilli, lemongrass, garlic, kaffir lime leaf, lime zest/juice, and sesame oil, then cooked in a smoking hot wok for literally a few seconds. Properly delicious.

Having said that, the stuff on the counter is usually good quality. I've had monkfish from the tesco counter before and it was good stuff.

My local Morrisons and Sainsbury's both sell fresh squid. In Morrisons, they do a box that will easily feed 4 people, or two fast bastards like me, for like £4. I think it might even be on the 3 for £10 deal. The quality is fine. I expect you'd be able to find it in Tesco no problem.

I substitute the pancetta for thin slices deli smoked turkey (grill in grease free pan until dried out and slightly brown on each side). Thank me later.

Will definitely be trying this out this weekend.
