If it's Premier League then I'll stick to 11 myself, so many you could mention, 11 off the top of my head...
Viera Demba Ba - For obvious reasons Gazza Modric Bergkamp Ginola Okocha Overmars Aguero Juninho (Boro) Henry

I've always said my absolute favourite non-United premier league player is Henry. He was phenomenal for Arsenal in that period where we dominated the league between us. Coincidentally that's still by far my favourite period in the premier league, late 90's/early 00's was thrilling and filled with pure passion.

Del Piero was my favorite foreign player growing up, just a class act and a brillant player. Maldini has to be there as well, a Rolls Royce of a player. Michael Laundrup, Zidane would be up there also. Presently it's hard to look past Xavi and Iniesta. Xavi in my opinion is the best player of his kind I've seen.

Only Premier League players?
Le Tessier would be one. Rejected Chelsea, loyal to his club, bloody great player on his day, and signed off his career with a last minute winning volley against Arsenal in the last ever game at the Dell. Gotta love that.
Scott Parker to a degree. Limited player but made the most of what he had. Never stopped working, put a huge shift in every game and made a very good career out of it. Admire players like that.
Peter Crouch. I can't help but like him. From his stupid robot celebration, to his reply when being asked "What would you be if you weren't a footballer?" "A virgin". Seems like he doesn't take himself seriously and has a laugh at himself, and still going at, what, 36? Good on him.
Tony Adams. Ferguson tried to sign him a few times, but it was no go. Colossal centre half, would have loved him at United.
Jay Jay Okocha. Class. Wouldn't have wanted him here, too inconsistent, but you would watch Bolton just to see what he would do.

Shearer & Henry are probably the two best to never play for us in the EPL. Shearer is hated on here but I've always respected him spending most his career at Newcastle. Henry was a genius.

Henry Bergkamp Drogba Gascoigne Okocha (although his bolton spell wasnt really successful) Modric Overmars Gerrard...nah just kidding I couldn't bring myself to put in Gerrard but we are missing a player with Carragher's mentality that why I included him, the Nani foul aside I think he was a decent player. No he wasn't. Carragher was a high class clogger and a low class man. Scouse bastard.

Very few Liverpool players I would say I have any time for (obviously).
Couple that spring to mind would be Beardsley and Hypia. Great players the pair of them, Beardsley and Hughes would have been a great partnership for us if we'd signed him back in about '83 (whenever we had him on trial).
I despise 99% of players who pull their shirt on, but not those two for whatever reason.
