Ta for the suggestions so far. Should of noted in the opening post that I've been to Amsterdam and Prague before so ideally looking for somewhere new to go! Florence certainly sounds like the sort of place I'm looking for though. Pay attention boys, come on.

Both fantastic. Particularly in winter though.

Been to Salzburg as well, albeit with a group of lads though. Thought it was nice but not a huge amount to do (bar the obvious). Looking like Germany or Italy so far!

Looking like Germany or Italy so far! im off to budapest tomorrow for training for work. been once before, really enjoyed it! again cheap once you get there, and im sure ryanair/wizzair/easyjet go there.

Went to Moscow years ago. Not very friendly people but the city was pretty impressive. Milan was good too if you are very wealthy and happy to pay about a tenner a pint.

Florence is fantastic, beautiful city and you are pretty much guaranteed the weather. Budapest is stunning and cheap as chips, not too big that you can't walk where you need to go.
A couple of mates have been to Dubrovnik and have raved about it. Another one is Marrakech, you can get a decent deal, flights and hotel from Easyjet. The only decision is; a riad inside the walls for the hustle and bustle or spa type hotel neat the Atlas mountains.

Dublin is awesome for a weekend. Some very good restaurants and the night life is unreal. Pricey though.
The arran islands off the west coast if Ireland are awesome as well.
