Hey Carbs, here is some made from scratch Pizza, using honey an yeast in my dough, light an airy, topped with moz, romano and asiago, and some sharp cheddar. Onion, peppers, hand chopped baby Bella mushrooms Sauce the crust, add veggies, give good shake of the grated Romano. Pop in oven for about 12 minutes to get crush going good Then put on light layer of Mozarella, then hamburger, hot Italian Sausage (hand made by Graziano bros) then pepperoni and another couple handfuls of the asiagio/moz mix top with shake of Romano for nice "brown an slightly crunchy crust. Sauce is mine modified from an old Spaghetti/lasagna sauce recipe. Since it cooks overnight an into the next day, the sauce I bag for pizza, lasagna an spaghetti and freeze, normally make about 2 gallons at a time.

just had my favourite food for 3 days in a row. its my personal anti-depression treatment whenever i feel like i should kill myself i start cooking spaghetti with tomato sauce. i know, i know its nothing special. but it so depends on how you cook the sauce. you can make a world class tomato sauce or just a tomato sauce that tastes like nothing special. here`s how i do it. during summer when i have my own tomatoes i use some of them obviously mixed with some mashed ones and simple but good diced tomatoes. no fresh tomatoes? no problem, i use the other ingredients. cutting some onions, celery and carrots and throw them into quality olive oil. afterwards i just place all the different tomato stuff on top of it and cook everything for about 30 mins as everything is boiling. after half an hour i turn down the heat, add some salt, pepper, fresh oregano and most importantly a tea spoon of sugar. i prefer brown sugar but whatever sugar is fine. tomato sauce without a tiny bit of sugar isnt the same, seriously. and then its just waiting and stirring. usually it takes around 3-4 hours until i`m satisfied with the taste, sometimes it needs more salt, pepper or sugar. as most of you probably know, the secret of a world class tomato sauce is time. well at least thats how they do it in sicily. no doubt you can make a good one in half an hour but give enough time to the sauce and it will blow your mind. i love so many different foods but nothing is better than a proper tomato sauce with spaghetti, that taste is unmatched. the best thing about that sauce is, that the next day it tastes even better. tomato sauce that was cooking for up to 4 hours with the right ingredients is amazing to eat when it gets cold on toasted bread. my goodness...i think i`ll just cook it again today so i`ll have enough for the weekend
